I rarely make vegetarian dishes, but when I do, they need to be properly filling and satisfying to eat. Chilli paneer is no exception and there something seriously addictive about the flavours. Lots of chilli, garlic, ginger and spring onions sautéed into a sauce that’s sweet, sharp, hot and glossy. The crispy paneer is tasty enough to eat on its own too.

In this recipe, I’ll run through the full process so you can nail it at home, fast. Everything from seasoning and dredging the paneer, through to the frying technique, sauce building and heat control – it’s designed to move fast and deliver maximum flavour.
