There are some dishes that rely on time. Long reductions, slow braises and hours of patience - but puttanesca is the opposite.
This pasta is all about building deep flavour, fast. Anchovies, garlic, capers, olives and chilli - layered properly to create a sauce that tastes sharp, savoury and structured. Every element is distinct, but nothing dominates.
In this version, we keep it classic but with one small twist: a splash of white wine. It’s not traditional, but it doesn’t change the soul of the dish. It simply lifts the sauce and sharpens the backbone beautifully. Wine in a puttanesca works wonders.
