This one’s all about process! The way you prep the leeks and aromatics, the time you give them to soften, the amount of stock you use + how you enrich the soup at the end all make a big difference to the final result.
In this version we use the whole leek. The whites form the backbone of the base, while the greens are turned into a vibrant green leek oil + a crispy leek garnish. It’s so much more satisfying than a simple bowl of soup. It’s a great one for batch cooking and freezing too.
