For me, there are very few salads that compare to this one, and a lot of that comes down to the dressing. It’s sharp, sweet, salty and spicy, with layers of heat, citrus and umami that somehow all work together perfectly. It’s incredibly versatile too, so once you make the dressing, you can pair it with all sorts of proteins.
I used lemongrass in both the dressing and butter baste to bring freshness and a really fragrant citrus note to the beef. The toasted rice powder is another key element here - it adds nuttiness, texture and body whilst helping absorb excess moisture so the salad stays crisp.
