Mom’s Poached Chicken

Ingredients

• 4 chicken breasts (room temperature)

• 2 bay leaves

• 6 garlic cloves

• 2 lemons, quartered

Instructions

1. Bring a pot of water to a boil. Add lemons, bay leaves, and garlic.

2. Gently place the chicken breasts into the pot. Cover with a lid and bring the water back to a boil.

3. As soon as it reaches a boil, remove the pot from heat.

4. Let the chicken sit in the hot water, covered, for 20 minutes to 1 hour to gently poach.

5. Remove the chicken and let it cool slightly. Slice or shred as desired.
