Salmon Croquettes, but just for one
This week, my grandmother passed away and instead of crying all week and grieving, Iβm celebrating her life by making dishes that remind me of her. My grandmother was super into her church. My entire childhood, sheβd drag me there at 5 am and weβd stay almost the entire day. Because we were there all day, she used to make a heavy breakfast at 4:30AM to hold us over until the end of service. One of my favorites that she made was salmon croquettes, grits, eggs, and toast. Iβm sharing this recipe with you all because itβs one that hits home for me. Enjoy π€
