My sorrel is coming up in the garden! This perennial green has the most captivating lemony tang, and soon it’ll look lush like in the second photo. We’ll be having soupe à l’oseille (French sorrel soup) again in no time. This recipe (in the 3rd photo) actually had us moaning in gustatory delight while I was testing it. It’s a French classic, and one of our favorites!
The variety of sorrel that I grow is called Profusion (It’s available from Richters Herbs in Ontario), which is really special. It’s so easy to grow! It doesn’t go to seed, so there’s no unsightly seed stalk or bolting that would make the leaves tough and fibrous. With this distinctive variety, the leaves remain productive and delicious for a long growing season. You can just plant it once and enjoy it year after year!
