In honor of citrus season (and because a snowstorm calls for cake, always)—get out there and pick up the ingredients for my Citrus Olive Oil Cake before all the shelves are empty!
For a 9-inch cake, you’ll need:
-3 navel oranges, preferably organic
-1/2 cup sliced almonds, plus 1/4 cup for the top
-1 cup/128 g all-purpose flour
-1 tablespoon baking powder
-1/2 teaspoon kosher salt
-4 large eggs, at room temperature
-3/4 cup/151 g granulated sugar, plus 2 tablespoons for the top
-2/3 cup extra-virgin olive oil
-2 sprigs fresh rosemary
