I write dark, satirical fiction. I also make pancakes.
I made these pancakes using one banana, two eggs, cornstarch, and vanilla.
Several variations of these pancakes exist, but the following measurements result in a pancake instead of a bubbly egg that tastes like it's mixed with bits of banana:
1 banana, mashed
1.5 tbsp of cornstarch (American tbsp., so convert if needed)
2 shakes of vanilla; don't go overboard with the vanilla because the recipe is already runny
Scoop the mixture onto a hot pan. I used a soup ladle to do this.
The mixture will run more than expected. Use a spatula to "contain" it.
When the bottom solidifies, flip.
The pancake will be softer than a regular pancake made with flour, but this is a quick, tasty option and great if you're gluten-free. I'm not gluten-free, but I like pancakes of all kinds and love the flavor of this one.
Top it as you like --- add syrup and butter, jam, or eat topping-free because it's sweet enough to do that.
