there is a sort of fascinating relationship that Americans have to nostalgia and i’m curious how that carries over. like if i’m a nostalgic German i can just go to a restaurant that has been around since 1730 and order schweinshaxe, but the concept of a nostalgic pastiche restaurant (the restaurant as cultural simulacrum I guess?) feels so remarkably American.
