I have such respect for Aki moroto. He is a master of cuisine, a practitioner of the culinary arts and he walks and reads amongst us here. He reads and supports so many amateur cooks and writers (me included) whilst he humbly holds all of the knowledge and experience. He blows my mind.

Do subscribe to his substack, he knows more about this than anyone else here, with a few exceptions.
