The sweet potato brownie that never lets you down (especially in your luteal phase!)
In the second half of your cycle progesterone rises and your metabolism slightly increases, which is why cravings tend to ramp up. Your body is asking for more energy and usually more carbs (because it actually needs them!) Pairing carbs with fats and protein helps keep blood sugar steady, which means you get the comfort without the crash.
This brownie recipe gives you slow carbs from sweet potato, fats from nut butter, protein from eggs and magnesium from cacao.
Sweet Potato Brownies
Ingredients:
medium sweet potato, cooked and mashed (about 1 cup)
2 eggs
2 tbsp nut butter
¼ cup cacao powder
2–3 tbsp maple syrup or honey
½ tsp baking powder
Pinch of salt
½ cup dark chocolate chips
Method:
1. Preheat oven to 180°C and line a small loaf tin.
2. Whisk mashed sweet potato, eggs and nut butter until smooth.
3. Stir in cacao, maple syrup, baking powder and salt. Fold through choc chips.
4. Pour into tin and bake for 25-30 minutes, until just set but still slightly fudgy in the centre.
5. Cool slightly, slice and eat warm.
