if you want to perform just one act of self-care this Sunday, turn on your oven to 425f, chop up whatever veggies are lingering, toss with oil and salt and maybe one of those seasoning blends you bought and never used, then roast until tender and crispy on the edges. store in a Tupperware in the fridge and eat a few bites of roasted veggies for snack time this week.
