I’ve always been intimidated to make beignets, despite having the Cafe Du Monde boxed mix in my pantry for, I don’t know, a decade? These pillowy beignets (pg. 127) were made entirely from scratch and were every bite delicious as the ones in New Orleans. The downside of beignets is you gotta eat ‘em while they’re hot! I halved the recipe so I only had 6, but after three in a ten-minute period, I couldn’t stomach anymore. I would definitely make these again if I had people over to help me out!
One of my comfort foods from childhood is white rice with butter, sugar and a little bit of milk. (Did anyone else have this? Is it a southern thing?) This creamy rice pudding (pg. 93) is essentially the grown-up version of that. In the book, Claire adds candied kumquats to add brightness but I went with some simple lemon zest instead. (I quickly realized that it is impossible to make a white bowl of mush look appetizing in a photo, but here it is anyway!)
