2 years ago I posted this recipe as my debut on this platform. I set out to create a newsletter that would be technique and ingredient led, aiming to give its readers an insight into how a chef cooks at home. I think, after many, many issues, that together we’ve achieved that. I was secretly road testing the idea for my debut cookbook that was published just a few days ago. It turns out people do want to know what was going on in their frying pan, on their chopping board and on their plate after all. In the age of convenience, where 10-second attention spans demand an even shorter time spent cooking, this warms my heart.

Those 2 years have vanished really and life has changed dramatically. I’m so grateful to all of you who read and support How I Cook, it has allowed me to create so many amazing memories and I can’t wait to see where it takes us next. Regular programming resumes next week, but for now, a heartfelt thank you.
